Homemade Lobster Rolls

Ingredients

Recipe serves 4

  • 6 lobsters

  • Mayo

  • Fresh lemon or lemon juice

  • Parsley

  • Boston Lettuce

  • Brioche buns

  • Butter

Directions

  • Remove all lobster meat from shell

  • Divide lobster meat into 4 equal portions and place in separate bowls so everyone can dress their lobster meat to taste

  • Gently mix a teaspoon of mayo and a sprinkle of lemon juice into lobster meat (I like to use less than a teaspoon of mayo at first, and add more if needed)

  • Brush sides of brioche roll with butter and toast on both sides

  • Add 1-2 pieces of Boston lettuce to the bottom of the brioche roll

  • Top with lobster meat, sprinkle with parsley, and enjoy!
