Avocado Toast with Poached Eggs

Ingredients

  • 1 avocado

  • 2 slices of any kind of bread

  • Olive oil

  • Lemon juice

  • Salt and pepper

  • Crushed red pepper

  • 2 eggs

  • Optional: feta or goat cheese

Avocado Toast

  1. Toast bread

  2. Slice up avocado and scoop out of skin onto toast

  3. Use a fork to mash and spread the avocado across toast until completely covered

  4. Drizzle olive oil and lemon juice evenly over the avocado

  5. Sprinkle salt and crushed red pepper to your taste

  6. Optional: add crumbled feta or goat cheese

Poached Eggs

  1. Boil a pot of water

  2. Once boiling, reduce heat to medium/high heat so water is still boiling but bubbles aren’t as crazy

  3. Crack an egg/s into the pot

  4. Don’t touch the eggs!

  5. Eggs are done once they have turned white and are no longer wispy

  6. Remove from water with a slotted spoon and place on toast

  7. Add salt and pepper to eggs
