Cranberry Walnut Goat Cheese Truffles with Honey

Ingredients

  • 1 log of goat cheese

  • Honey (approx 1/4 cup)

  • Candied walnuts (approx 1-2 cups)

  • Dried cranberries (approx 1-1 1/2 cups)

  • Parsley

  • Salt

Directions

  • Crush walnuts in a shallow bowl or plate

  • Chop dried cranberries into small pieces and mix together with walnuts

  • Generously sprinkle parsley and a pinch of salt over walnuts and cranberries, mix well

  • Scoop about 1 tablespoon of goat cheese at a time with a spoon, rolling each scoop into a ball

  • Roll goat cheese ball in cranberry walnut mixture, repeat with each goat cheese ball

  • Drizzle a thin layer of honey on serving plate

  • Place goat cheese balls on plate on top of honey, and drizzle more honey on top of them

  • Add a toothpick to each goat cheese ball and serve!
