Cranberry Walnut Goat Cheese Truffles with Honey
Ingredients
1 log of goat cheese
Honey (approx 1/4 cup)
Candied walnuts (approx 1-2 cups)
Dried cranberries (approx 1-1 1/2 cups)
Parsley
Salt
Directions
Crush walnuts in a shallow bowl or plate
Chop dried cranberries into small pieces and mix together with walnuts
Generously sprinkle parsley and a pinch of salt over walnuts and cranberries, mix well
Scoop about 1 tablespoon of goat cheese at a time with a spoon, rolling each scoop into a ball
Roll goat cheese ball in cranberry walnut mixture, repeat with each goat cheese ball
Drizzle a thin layer of honey on serving plate
Place goat cheese balls on plate on top of honey, and drizzle more honey on top of them
Add a toothpick to each goat cheese ball and serve!
