One Pan Breakfast
Ingredients
1 medium potato chopped to your taste (strips or cubes) or half a bag of Trader Joe’s Frozen Shredded Hash Browns
Eggs (2-3)
Spinach (2-3 handfuls)
Vidalia onions (1/2 onion, chopped into smalls cubes)
Olive oil
Salt
Pepper
Paprika
Garlic powder
Cayenne pepper
Rosemary
Optional toppings: 1/2 avocado, prosciutto, goat cheese
Directions
Generously drizzle olive oil in pan and add potatoes
Season with salt, pepper, paprika, garlic powder, cyan pepper, and rosemary to taste
Cook over medium high heat until potatoes start to turn golden brown, mixing regularly
Add onions and continue cooking
When potatoes are almost at your liking (taste for crispiness and to ensure inside is soft) add spinach
Mix one last time and spread evenly over pan
Crack eggs on opposite sides of pan and cover immediately
When eggs have turned white, remove lid and remove from heat
Add salt and pepper to eggs
Let cool for a minute and add optional toppings (goat cheese, avocado, prosciutto)
