One Pan Breakfast

Ingredients

  • 1 medium potato chopped to your taste (strips or cubes) or half a bag of Trader Joe’s Frozen Shredded Hash Browns

  • Eggs (2-3)

  • Spinach (2-3 handfuls)

  • Vidalia onions (1/2 onion, chopped into smalls cubes)

  • Olive oil

  • Salt

  • Pepper

  • Paprika

  • Garlic powder

  • Cayenne pepper

  • Rosemary

  • Optional toppings: 1/2 avocado, prosciutto, goat cheese

Directions

  • Generously drizzle olive oil in pan and add potatoes

  • Season with salt, pepper, paprika, garlic powder, cyan pepper, and rosemary to taste

  • Cook over medium high heat until potatoes start to turn golden brown, mixing regularly

  • Add onions and continue cooking

  • When potatoes are almost at your liking (taste for crispiness and to ensure inside is soft) add spinach

  • Mix one last time and spread evenly over pan

  • Crack eggs on opposite sides of pan and cover immediately

  • When eggs have turned white, remove lid and remove from heat

  • Add salt and pepper to eggs

  • Let cool for a minute and add optional toppings (goat cheese, avocado, prosciutto)

  • Enjoy!
